Loosehead prop John Ryan has overcome illness to return to a front row also consisting of hooker Kevin O'Byrne and BJ Botha at tighthead.
O'Callaghan is partnered in the second row by Billy Holland who starts his first game since the 10th of October.
Year two academy player Rory Scanell makes his first competitive senior appearance alongside Andrew Smith in the centre.
Munster go into the game in fourth place, seven points off Ospreys who lead the way.
