Australian Barty dominated the first hour of the match and it looked as if she could take it in straight sets.
The second set was tied at 4-4 before a really impressive fight by Pliskova saw her take it 7-6, with the tie-breaker of the final game finishing up 7-4 to the Czech.
Barty then was back on top for the deciding set, taking it 6-3 to become the first Australian to win the Venus Rosewater Dish since 1980.
After she beat Angelique Kerber in the semi-final, Barty said that just playing in the final of the Championships would achieve a lifelong dream.
After going one better by winning the title, she was emotional after the match.
"This is incredible. I have to start with Karolina, congratulations on a fantastic tournament to you and your team. I love testing myself against you and I'm sure that we'll play many more matches.
“I want to genuinely thank every single person in this stadium, you have made my dream so special. Thank you so much."
As well as praising her opponent and the crowd, Barty was pleased too with her own performance, particularly her resilience as the match went on.
"Just keep fighting. Karolina is an incredible competitor; she brought out the very best in me today. It was an exceptional match right from the start, I had to bring my very best level.
"I was really proud of myself in the way that I was able to reset, keep on going and hold my nerve there at the very end. I can't remember the match point!"
